Lemon Blueberry Scones:
2 Cups Flour
1/8 Cup Sugar
1 Tsp Salt
1 TBSP Baking Powder
1/2 TBSP Lemon Zest
1 1/2 Cups Cold Butter Cubed
1/2 cup whipping cream
2 Eggs
1/2 cup blueberries + 1/8 cup flour
Egg Wash - 2 Eggs + tbsp milk
Glaze:
1 cup powdered sugar
2-3 TBSP lemon juice
Combine Flour, sugar, salt, baking powder, lemon zest and butter in a mixer and mix until butter is in pea size pieces. Mix the whipping cream and eggs and beat until combined and add to the flour mixture slowly. Important to keep all ingredients as cold as possible. Mix in the blueberries dusted with flour. Flatten out on floured surface and cut into triangles. Brush egg wash over scones and bake in 400 degree oven for 20-25 minutes. Once cooled for 10 minutes top with glaze.
