Done using the mod I recently uploaded, felt like quite an achievement so thought I'd share this fight, and also help anyone else trying to beat it.
Characters have the stats of when they first join you, unable to ever level up.
Furthermore, you can't equip anything. Ghost Medal is equipped on Mario automatically when you obtain it, but provides no bonus since it doubles defense, of which Mario's is zero.

Update:
I ended up making it all the way to smithy, then gave up because he has way too much health to beat without godly rng.
