Litti Chokha is the signature dish of Bihar, India, and is also popular in Jharkhand and eastern Uttar Pradesh. It is a rustic, nutritious, and hearty meal that has evolved from a humble farmer's staple to an internationally recognized delicacy.
What is Litti Chokha?
The dish consists of two primary components:Litti: Whole wheat flour dough balls stuffed with Sattu (roasted black chickpea flour) mixed with herbs and spices like ginger, garlic, green chilies, carom seeds (ajwain), and lemon juice.
Chokha: A smoky vegetable mash made from roasted eggplant (baingan), tomatoes, and boiled potatoes. It is seasoned with raw onion, coriander leaves, and a signature dash of pungent mustard oil.
Historical and Cultural SignificanceAncient Origins: Its history traces back to the Magadha Empire, where it was a staple for soldiers due to its long shelf life and high nutritional value.
Rebellion Food: During the Indian Rebellion of 1857, freedom fighters (including Rani Lakshmi Bai) reportedly relied on Litti because it could be cooked easily in jungles and didn't require much water or elaborate utensils.
Spiritual Ties: In Bihar’s Panchkosi Jatra, Litti is offered to Lord Ram as prasad, highlighting its ritualistic importance.
