FOR DAL TADKA:
¾ cup Split Pigeon Peas (Toor Dal)
¼ cup Yellow Moong Dal
2-3 tbsp Split Bengal Gram (Chana Dal)
2 cups Water
1 tsp Salt
¼ tsp Turmeric Powder
1 Bay Leaf
1 small piece Cinnamon
2-3 Cloves
1 tsp Clarified Butter
2 tbsp Clarified Butter
1 tbsp Oil
1 tsp Cumin Seeds
A pinch of Asafoetida
2-3 Dry Kashmiri Red Chillies
1-2 tbsp Finely Chopped Ginger
1-2 tbsp Finely Chopped Garlic
2-3 Green Chillies
2 medium Onions
2 medium Tomatoes
Salt to taste
¼ tsp Turmeric Powder
½ tsp Red Chili Powder
½ tsp Coriander Powder
¼ tsp Garam Masala
Water, as required
2 tbsp Clarified Butter
1 tbsp Finely Chopped Garlic
1 tsp Cumin Seeds
2-3 Dry Red Chilis
½ tsp Red Chilli Powder
1 hot Charcoal Piece
2 tsp Clarified Butter or Oil
Fresh Coriander
Ginger Juliennes
Green Chilis
Reserved Onion-Tomato Tadka
Garlic Tadka

FOR JEERA RICE:
2 tbsp Clarified Butter
1 tsp Cumin Seeds
1 cup Boiled Basmati Rice (80% cooked)
½ tsp Salt or to taste
Fresh Coriander
