Try this delicious Bolon Recipe made with green plantains. I think the best bolon is Bolón Mixto, which includes a bit of pork. In Ecuador, traditional bolon mixto is made with chicharrón, but in my recipe I use smoked rib meat. Bolon is a hearty breakfast comfort food, and a great way to cook green plantains.
