Today in the Test Kitchen we finalised our Tiramisu Cookie! Development for this cookie started back last year but we couldn't get the filling right. Turns out it was the mascarpone filling ratios (instead of adding butter for a buttercream we adapted to a mascarpone/icing sugar/cornflour ratio only). The topping is inspired by IG: nannettebonet (white chocolate melted ontop to make the cocoa dusting pop) but it turned out too sweet with our cookie dough, so we'll go for straight dusted cocoa for the final result. What flavour should we try next?
